With its soaring chandeliered marble lobby and grand ground-floor restaurants, the 1813-built Imperial is one of Cork's architectural treasures. A multimillion dollar renovation has fittingly restored it to its considerable period splendour, as well as seamlessly adding a new contemporary wing, a blissful Aveda spa, and a gourmet food hall.

The epicentral Imperial is steeped in Irish history. Romantics will fall for the Imperial's classic rooms, with blue and gold decor and old-fashioned black-and-white tiled bathrooms with curtained, timber-sided bathtubs. Former guests have included Charles Dickens, William Makepeace Thackeray, Sir Walter Scott and the composer Liszt, not to mention Free State Treaty negotiator Michael Collins, who spent his final night in room 115 before his assassination in 1921. The extensive renovations have seen the addition of 42 sleek new rooms, bringing the total to 130, all with Internet-enabled interactive TVs. There's also wi-fi in the lobby and a state-of-the-art business centre in the style of an elegant timber-shelved library. The Imperial's one of a prestigious family-owned group of three similarly stand-out hotels in Ireland.
