Medieval meets modern at Dalhousie Castle, an impressive fortress and country residence built in the 15th century for the Ramsay family. Situated on the banks of the River South Esk, just 7mi south of Edinburgh, it was converted to a hotel in 1972.

The castle's 27 rooms include 14 with historical themes, such as the barrel-vaulted De Ramseia Suite with its 18th-century carved oak bed, a stone alcove containing the 500-year-old castle well, and an oak-panelled bathroom with a (considerably more recent) double Jacuzzi; and the vast Robert the Bruce Suite, decked out in shades of burgundy and blue, with a canopied king-size bed. But we would go for the Dalhousie Room, a circular bedroom with a grand four-poster bed housed in the castle's round tower. Dine in the hotel's atmospheric Dungeon Restaurant, beneath a vaulted ceiling and bare stone walls, watched over by suits of armour, then enjoy an after-dinner drink in the wood-panelled library, with its leather armchairs and log fire.
