Built in splendorous belle époque style in 1912 and now a protected historical site, the palatial, pink-domed Negresco - dreamed up by Romanian hotelier Henri Negresco and owned by the same family since 1957 - is famous not only in France, but everywhere. At the hotel's heart is the stained-glass Salon Royal designed by Gustave Eiffel, bearing one of only two chandeliers of its kind - consisting of 16,800 beads of Baccarat crystal weighing over one tonne - the other is in the Kremlin. Filled with more valuable art than many public museums, including one of only three Hyacinthe Rigaud Louis XIV portraits (you'll find the others in the Louvre and Versailles), the 1st floor focuses on the 18th and 19th centuries, the second floor modern art, the third 18th-century romantic, the fourth Napoleon I, and the fifth Napoleon III. Each of the 121 rooms and 24 suites is utterly unique and decadently attended to by a total of 250 staff. When (or rather, if) you tire of admiring the priceless art and architecture, the Negresco's private beach, Neptune Plage, is just across the street.

Up there in the fame stakes is the Negresco's crimson-coloured, Michelin-starred restaurant, Chantecler (closed Mon, Tue and during January), where Jean-Denis Rieubland's 130 'discovery' menu goes all out on luxury treats. Lighter all round, the bistro La Rotonde is like dining aboard a carrousel, with painted horses and fairy floss-hued booths.
If the walls could talk! Past guests have included Queen Elizabeth II, Winston Churchill, Harry S Truman, Picasso, Matisse, Dali, Jean Cocteau, Edith Piaf, Frank Sinatra, The Beatles, Charlie Chaplin, James Dean, Brigitte Bardot, Marlon Brando, Alfred Hitchcock, Walt Disney, Michael Jackson...
