Currently the most awarded hotel in Australia, the incredibly stylish Henry Jones is worth a visit even if you don't stay here. Housed within a row of restored warehouses, including the jam factory once owned by HJ himself, it's been designed to highlight rather than mask the building's history.In some rooms you can lie in bed and look at the original tin roof above you (although it's now insulated so you won't hear the rain) while others feature exposed brick walls with traces of crystallised jam running down them. The Peking Suite is built around the old private residence of Henry Jones and includes his living room (complete with uneven floorboards) and the now heritage-listed staircase. This suite also happens to have possibly the most indulgent bath ever invented. If you've never tried a sok spa, then book yourself in here pronto. Art, the majority of it by Tasmania artists, hangs everywhere, providing a unique space for guests to admire, and purchase, original works. The entire experience is stylish, sophisticated and utterly unique.
