The sun rising over the Coupure canal creates a misty marvel which is particularly photogenic when viewed between the chaos of moored barges seen from the gates outside the comfortable, modern Hotel Rosenburg.Architecturally the hotel makes a cursory nod to traditional style but it's a fundamentally ordinary late-20th-century brick structure amid an interesting melange of canalside styles. Recently taken over by the owners of Bruges's Diamond Museum, the hotel is undergoing a thorough renovation. So far five refreshed rooms include wide double beds and neat, clean predominantly white decor. Older rooms cost the same but can be rather gloomy and have the atmosphere of an upper-range motel. All bathrooms have bath tubs and gleaming white tiles. Redecorated suite 110 has a mini kitchenette, big sitting area and lovely canal views but still struggles to justify its very elevated price range. There's a bright, glass-covered breakfast area. Staff are faultlessly obliging. The Rosenburg was formerly called the Hotel Dante and most locals (and street signs) still know it as such.

If you don't want to walk into town, several appealing dining options are scattered in the quaint old lanes around the hotel. Closest is the Bistro de Schaar, a 1614 step-gabled canal house. Its bare-brick interior features framed tailors' shears (both real and embroidered) reflecting its name. The menu is short but offers tempting seafood and fish dishes.
