The Hotel du Vin isn't one of those places where you just dump your bags and hit the town; you really need to stay in and enjoy it. Make your way up the sweeping carved staircase to a spacious, modern room sponsored by a wine house, have a long soak in the bath or the giant walk-in shower and then mooch downstairs and indulge your whims in the health spa. If you're really planning an occasion, bag the Grange suite with its nine-foot bed, twin bath tubs and en suite mini-gym. Play a game or two of pool, quaff your choice of bubbly in the flamboyant Venetian champagne bar or let the experts help you decipher the mother of all wine lists as you relax in the cellar bar with a Cuban cigar from the well-stocked humidor.
