Quotes Built in splendorous belle époque style in 1912 and now a protected historical site, the palatial, pink-domed Negresco - dreamed up by Romanian hotelier Henri Negresco; and owned by the same family since 1957 - is not only one of the most famous hotels in France, but anywhere.

At the hotel's heart is the stained-glass Salon Royale designed by Gustave Eiffel, bearing one of the world's two chandeliers of its kind (16,800 beads of Baccarat crystal weighing over one tonne; the other is in the Kremlin). Filled with more valuable art than many public museums (including, for instance, one of only three Hyacinthe Rigaud Louis XIV portraits; you'll find the others in the Louvre and Versailles), the first floor focuses on the 18th and 19th centuries, the second floor modern art, the third 18th-century romantic, the fourth Napoleon I, and the fifth Napoleon III. Each of the 121 rooms and 24 suites is utterly unique (with mod cons, too), and decadently attended to by a total of 250 staff. When (or rather, if) you tire of admiring the priceless art and architecture, the Negresco's private beach, Neptune Plage, is just across the street.

Up there in the fame stakes is the Negresco's crimson-coloured, Michelin-starred restaurant, Chantecler (closed Mon, Tue, and during January), where Bruno Turbot's classic French cuisine might include oscietre caviar on egg-white mousse, followed by Rossini beef on truffle brioche. Lighter all round, the bistro La Rotonde is like dining aboard a carrousel, with painted horses and fairy floss-hued booths.
